Poor Dinners: #1 Veggie and Sausage Hash

So my newest fad with family meals is cheap dinners that I can stretch to feed all 4 of us and pack some lunches.

One of my favorites so far is the Veggie and Sausage Hash that I make different variations of ALL THE TIME!! Its basically a starch, protein, and heavy on the veg with some simple seasonings. Its so simple, so cheap, and so delicious.

There are tons of ways to do it with the same seasonings and around the same price.

I have started keeping a 10lb bag of rice and I make casseroles, hashes, soups, etc and add rice to extend the meal all the time. My rice cooker is my best friend.

I also try to have a small bag of sweet potatoes and russet potatoes on hand to add to different things just to add a starch and stretch the meal. I find that things last longer, stretch farther, and are more filling.

My go-to veggies that are ALWAYS in my house come hell or high water, are: zucchini, yellow squash, sweet bell peppers, and onion. I don’t know why. It drives my husband absolutely insane but I use these veggies in almost every meal. I have even recreated some meals to include them.


So this one is:

2 tbsp olive oil

1 large zucchini, diced

1 large yellow squash, diced

1 red sweet bell pepper, diced

1/3 onion, diced

1 tbsp minced garlic

1 Johnsonville polish kielbasa, diced

Dice all of your veggies. Add all ingredients to a large skillet and sauté. Season with salt, pepper, cumin, and cayenne pepper (to taste). Serve over rice.

Boom! Done! Its that simple.

The whole thing meal costs about $6 and feeds 4 with seconds.

You can also sub rice for sweet potatoes or add black or kidney beans to the meal to add more protein and stretch even farther.
